This one is from my mommy.
1/3 c butter, softened
1/3 c packed brown sugar
1/3c chopped walnuts (I don't always use)
1 c sifted all-purpose flour
1/4 c white sugar
8oz cream cheese
1 tablespoon milk
1 egg
1/2 teaspoon vanilla extract
preheat oven to 350 degrees
to make the pastry: Cream together the butter and brown sugar until light and fluffy. Add in the flour and nuts (if you are using and stir until mixture becomes crumbly. Set aside 1/4c to use as a topping
Press into a 8-inches square pan and bake for 12-15 minutes, Let cool.
to make filling: Beat together the white sugar and cream cheese until smooth. Stir in the egg, milk, lemon juice, and vanilla and mix well. Spread over baked crust sprinkle reserved mixture on as the topping.
Bake 25-30 minutes
Let cool and refrigerate till ready to ENJOY. (can be served with fruit)
